There are lots of cooking sites out there and lots of great recipes. But one unique detail of our off grid life is we basically GROW HARVEST HUNT FORAGE and PRESERVE most of our food. We also think outside the box when it comes to preparing it to!
I'm FRUGAL! I'm also busy! That means I need food FAST. I don't want to spend all day cooking. I'm sure most of you feel the same way. BUT we also want healthy food. Food that isn't processed, made with corn syrups and other poisons we get from the store!
As a RN I teach people how to eat right! I work with patients who have heart disease, diabetes, kidney issues, food allergies, GI problems. IT all comes down to our diet! We can improve our HEALTH thru our food! Its medicine that God designed for us! BUT we have misused it We have distorted food and added so many chemicals its not healing anymore.
This is why I decided to do a food blog. I think people overlook the extreme value of how food can effect our lives. Such a simple thing yet so overlooked. It can destroy our health or uplift and sustain us! In this blog you will find simple recipes that are easy to create and use the freshest ingrediants possible. I wil also be discussing health and wellness and offering tips and information from a nurses prespective. A presepective that takes into consideration a organic out of the medical establishment view! I think we all could appreciate some support in that area!

Wild Game stroganoff
Cooking with wild game is so much more healthier then what you get in the store. We love our home caned wild game that WE harvest ourselves from the mountains!
For those who dont have the opportunity to hunt think outside the box. Many farms sell their free ranged beef and pig meat. And many stores now carry organic non gmo meat. So wait for a good sale and then DONT freeze it CAN it!
Here's my FAST and EAST STROGANOFF recipe for those who are hurried for time
1 Quart of you canned MEAT ( Venison/Bear/Beef)
Mushrooms (1 1/2 c)
Onions (3/4 cup diced)
Fresh Chives (1/4 c)
Garlic (half clove)
Sautee these in Coconut oil
Add Dried Celery Flakes (TBLS)
Now add your Canned meat
Add approx 2 cups water
Add Bouillon (I use Organic) Taste to Flavor approx 4 TBLS
Add 1 cup Sour Cream (I make my own)
Thicken with arrowroot or some cornstarch
Cream of BROCCOLI soup
1/4 cup (1/2 stick) unsalted butter
1/4 cup all-purpose flour (spooned and leveled)
4 cups low-sodium chicken broth
1 pound broccoli, cut into florets, stems peeled and chopped
Coarse salt and ground pepper
hot pepper flakes
In a medium pot, melt butter over medium stirring occasionally, .
Add flour and cook, stirring, until combined, 1 minute.
Whisking constantly, add broth and 1 cup water and bring to a boil over high. Reduce heat and simmer, whisking occasionally, 10 minutes.
Add broccoli and bring to a simmer. Cook until broccoli is very tender, 20 minutes.
(I take my broccoli and run it thru the food processor before adding it to my soup)Then at the end layer in the celery flakes and hot pepper
THE celery is KEY to adding depth to this soup!!!
EASY PHYLLO RECIPE
Fresh Chopped Spinach
Chopped Onion (1/2 C)
Mushrooms (1 c)
Herbs (1 1/2 tsp of each)
Hot Pepper Flacks
Take off stove then add PESTO 1/4 c
NOW take your phyllo dough and brush melted coconut oil or butter to each sheet
Layer 10 sheets
At this point you can then add FETA cheese and Some Parmesan if you like
Place in Oven 350 Bake til golden!
