Chickpeas! Magical! With so many people trying to lose weight and get healthy we all seem to miss the boat on eating the right foods.
I make a killer hummus. Its a easy healthy recipe that I create not just for a traditional dip. I add such foods as black beans and do a salad, I do wraps with it, you can add it to for a topping on your veggies. Mix it in your stir fry!
The health benefits of chicks are top notch
As a RN I encourage people to eat foods that FILL them up and helps them with the sugar highs and lows. We are ruled by our cravings. Part of the issue is we arent use to eating a well balanced healthy and real food. Most Americans are processed! I really mean that. WE ARE PROCESSED! We live off of foods t hat aren't even REAL!
When you change the way you look at food and eat, you will notice so many changes in your appetite, your taste, your moods, and you feelings of real fullness!
Hummus is a great food that can help many people who struggle with weight control and appetite issues. When I add it to any meal...I FEEL FULL. It fills you up so quick;y! So many people use hummus just for dipping their chips or pita breads of veggies. That is fine for a snack but I add it to my stir fry veggies, I make a great concoction of fresh garden spoils with black bean and a who lop of hummus on top! You can roll it into your fresh tortilla! So many ideas! Be creative in t he use of your hummus. you will be adding more fiber which will help smooth out those cravings during the day!
YOU WILL NEED1 (15-ounce) can chickpeas or 1 1/2 cups (250 grams) cooked chickpeas
1/4 cup (60 ml) fresh lemon juice (1 large lemon)
1/4 cup (60 ml) well-stirred tahini, see our homemade tahini recipe
1 small garlic clove, minced
2 tablespoons (30 ml) extra-virgin olive oil, plus more for serving
1/2 teaspoon ground cumin
Salt to taste
2 to 3 tablespoons (30 to 45 ml) water
Dash ground paprika, for serving
DIRECTIONSIn the bowl of a food processor, combine the tahini and lemon juice and process for 1 minute, scrape the sides and bottom of the bowl then process for 30 seconds more. This extra time helps “whip” or “cream” the tahini, making the hummus smooth and creamy.
Add the olive oil, minced garlic, cumin, and a 1/2 teaspoon of salt to the whipped tahini and lemon juice. Process for 30 seconds, scrape the sides and bottom of the bowl then process another 30 seconds or until well blended.
Open, drain, and rinse the chickpeas. Add half of the chickpeas to the food processor and process for 1 minute. Scrape sides and bottom of the bowl, then add remaining chickpeas and process until thick and quite smooth; 1 to 2 minutes.
Most likely the hummus will be too thick or still have tiny bits of chickpea. To fix this, with the food processor turned on, slowly add 2 to 3 tablespoons of water until you reach the perfect consistency.
Taste for salt and adjust as needed. Serve hummus with a drizzle of olive oil and dash of paprika. Store homemade hummus in an airtight container and refrigerate up to one week.
Weight loss. It rules us. We make New Year resolutions over it. Monthly resolutions We join health clubs and employee pools to encourage us. We buy pills and powders, books and equipment. And for the most part VERY few people succeed in making that life long change.
Don't feel bad. Don't beat yourself up. It is a losing battle that Americas aren't winning.
But the problem isn't necessarily all us!
It isn't our lack of motivation or willingness to change.
I thinks its because we live in a society surrounded by two things, food and advertisers that display skinny fit bodies with it. Its like a oxymoron. You Cant have your big mac and ice cream and expect to look like Twiggy.
Its just not possible. But we are inundated with two visions and both are used to lure us into a temptation that can never be fulfilled and in which we most likely will fail at!
I come from a eating disorder background. So I have had to look at those images and attempt to NOT have them play with my mind. Specifically while walking thru the ice cream section of the supermarket or the bakery. Our appetites gets distorted when we have a eating disorder. And it doesn't make any difference if its a addiction to food, a anorexia where we are starving ourselves, or a binge purge bulimia. Eating disorders changes our bodies so drastically that it becomes almost a nightmare to break free from.
Years ago when I was in the arms of my eating disorder it just wasn't talked about. I think back in the 80's it was probably kept in the closet and the pressures of how we looked wasn't as bold and forceful as today!
But now a days you see it widespread. From adolescents as young as ten are becoming victims. Boys and girls! And yes I use the word victim because it is a fatality that perverts what people need to sustain..AND THAT'S FOOD!
We know more about it, have programs and books and counselors and support groups to deal with it. Yet it still prevails.
My journey was along one. A healing one. A inner discovery one. And to be honest there just isnt a quick and easy fix. I had to first learn to accept myself and love myself. That was hard. Guilt, feelings of ugliness, not good enough, failure, you name it I carried the baggage of what I had created in my mind. It entrapped me and enslaved me. Back then I wasn't a true follower of Christ. But I don't think it really matters if your saved or not. I personally think it ensnares many. And its hard to turn away when you are weak and broken and you internalize everything. The holy spirit has worked in my life in a powerful way. But even as believers we often fall. And this indeed is stumbling block for many!
My steps to recovery started with relearning rethinking re visualizing things. Learn to let go of that guilt. Learn to see yourself differently. Empower. Think strong not weak. I then worked on myself physically. I started training and become a athlete. I started competing in 5k 10k running races. Then I started mountain biking. I even progressed into endurance races. 24 Hour skiing, 24 hour adventure racing. Crazy stuff!
One thing lead to another and I was full gonzo. I also went back to school and started studying in nursing. This all helped. BUT it wasn't the cure. Sometimes without knowing it we take one addiction and replace it for another. Funny how that works. Striving to fill holes that are empty with another substitute.! But at least it was positive for me and my health and my mental wellbeing
After many years of eating a unhealthy diet my body had to adjust to real food, real cravings, and real feelings of hunger
I had to actually work on my appetite. A appetite that was ruined. I didn't know what hunger was. I didn't know what real food was or what it tasted like!
That took years. However what did help was understanding and appreciating what food is and does! Its healing properties is restorative values, its SUSTAINING LIFE!
FOOD is suppose to sustain..NOT ENSLAVE !
Thus today I am a fit healthy and energetic over fifty woman who loves her life, body and self!
I am blessed in many ways. I have found the Lord and He to gives me living water and a food that I do not need to eat.
Last August I had a traumatic bike accident and my whole life was changed instantly.
But at that moment in time I was the fittest I have ever been. I had just competed a Train To Hunt Competition and was proud to say I had won the " pack run" part even against the men's field! I was glowing in health and athleticism. When the accident happened I still am thankful that despite the long recovery I know it would have been worse if I would have still had my eating disorder!
As a nurse now I see the destruction to our health. The fragility of our health. And the fact that it only takes one thing to change our lives instantly.
I am so happy to have broken free and can honestly say...there has never been a moment where I have ever wanted to go back.
And that my friends should give you hope today!
If you have a eating disorder, a addiction that is paralyzing you and ruining and RUNNING your life..you CAN win! You can get back what you lost! YOU can even be better then before!
Im living proof!
So when I say "There's proof in the pudding" indeed that moto means more then you think!!
1 Peter 3:3-4Do not let your adorning be external—the braiding of hair and the putting on of gold jewelry, or the clothing you wear— but let your adorning be the hidden person of the heart with the imperishable beauty of a gentle and quiet spirit, which in God's sight is very precious.
Here is a shake I wanted to share with all of you. I did a video on the shake that I and my husband drink everyday. We are high energy and very active so I need extra protein and nutrition. The unfortunate fact is people look at me and think "Ahh she's skinny what does she have to worry about!"
Worry about? We all have to worry about our health. Diabetes runs in my family as well as heart disease. Although I am at a healthy weight look at how unhealthy I was when I had a eating disorder when I was twenty!
DONT miss the point of GOOD nutrition at any weight!
Focus on the HEALING effects of the foods you choose.
This shake has several KEY ingredients that address such things as fat metabolism, protein , sugar cravings. GI friendly.
Start with one simple change in your diet for consistency. All it takes is ONE change that can help restore you to a healthier YOU!!!!
There are lots of cooking sites out there and lots of great recipes. But one unique detail of our off grid life is we basically GROW HARVEST HUNT FORAGE and PRESERVE most of our food. We also think outside the box when it comes to preparing it to!
I'm FRUGAL! I'm also busy! That means I need food FAST. I don't want to spend all day cooking. I'm sure most of you feel the same way. BUT we also want healthy food. Food that isn't processed, made with corn syrups and other poisons we get from the store!
As a RN I teach people how to eat right! I work with patients who have heart disease, diabetes, kidney issues, food allergies, GI problems. IT all comes down to our diet! We can improve our HEALTH thru our food! Its medicine that God designed for us! BUT we have misused it We have distorted food and added so many chemicals its not healing anymore.
This is why I decided to do a food blog. I think people overlook the extreme value of how food can effect our lives. Such a simple thing yet so overlooked. It can destroy our health or uplift and sustain us! In this blog you will find simple recipes that are easy to create and use the freshest ingrediants possible. I wil also be discussing health and wellness and offering tips and information from a nurses prespective. A presepective that takes into consideration a organic out of the medical establishment view! I think we all could appreciate some support in that area!
Change the way you look at food. Visit me often and I will CHANGE the way you feel!
It all starts with food!
1 Corinthians 6:19-20
19 Do you not know that your bodies are temples of the Holy Spirit, who is in you, whom you have received from God? You are not your own;
20 you were bought at a price. Therefore honor God with your bodies.
